Amuse-bouche with date, goat cheese, balsamic and speck.
Oyster three ways: raw, fried and poached.
Butter-poached lobster salad with brioche, frisee, celery and hollandaise.
Your choice of entree: Steak au poivre filet with Yukon gold puree, sherry cream and Brussels sprouts; or Arctic char with cauliflower puree, braised kale, and fruit and nuts.
Foie gras with apple butter, pistachio and maple.
Your choice of dessert: crème brûlée or chocolate mousse.
